Larmandier's small estate is rightly celebrated as one of the best in Champagne. In the Côte des Blancs, it produces brilliant, distinctive Blanc de Blancs, which essentially differ from others by three factors: maximum individuality, terroir, and uniquely precise and complex aromas.
In their production process, the Larmandiers have been using natural yeasts since 1999, and the aromatic results are fascinatingly distinct. Their Champagne cuvées ferment and mature in large wooden barrels. Furthermore, as is fitting for a true grower, the grapes come exclusively from their own vines. The sun-ripened grapes are harvested at fantastic quality and processed gently. Therefore, the Larmandiers can largely forgo the usual dosage, and almost all their Champagnes are "Brut Nature" or "Extra Brut," meaning minimally dosed.
Organic and biodynamic (certified) production has long been standard practice. Likewise, the bottles are gently disgorged by hand!
