The dosage is the finishing touch that the winemaker adds to the wine and it depends on the desired wine type. The "liqueur de dosage" usually consists of cane sugar dissolved in wine at a rate of 500 to 750 grams per litre. The designation Zero Dosage (also Brut Nature or Pas Dosé) is consequently cited on champagnes whose residual sugar content is less than 3g and to which no additional sugar has been added with the dosage.

A Zero Dosage is not by default a good champagne, but only a base wine of exceptional quality can develop into a great champagne even without the dosage.
