Fruity and intense, the result of vineyard work with as little intervention as possible, only selected and ripe grapes, subjected to malolactic fermentation and aged on the lees.
75 cl and 150 cl magnums are produced exclusively from the Largillier monopole, from Pinot Noir and a single vintage. For this wine, the 2 sub-plots, "Fruit" and "Fleur", are included in the composition of this cuvée, which are vinified separately and blended together in April/May. As the names of these two sub-plots suggest, fruit and white flowers with notes of liquorice dominate. In some vintages, red fruits are more strongly represented. The attack is full-bodied, mineral and refreshing due to the clay in KM2, with a long, soft finish due to the limestone in KM2. This champagne is ideal as an aperitif and is an excellent accompaniment to braised scallops and other shellfish, as well as white meat (e.g. chicken and veal in sauce). Serve at a temperature of 10° C.
